INGREDIENTS:

  • 1 Tablespoon Olive Oil
  • 4 Ounces Chopped Ham
  • 3 Ounces Chorizo Sausage, Sliced
  • 2 Onions, Diced
  • 2 Carrots, Diced
  • 4-6 Garlic Cloves, Minced
  • 2 Cups Canned Northern Beans
  • 1 Bunch Collard Greens, Stripped And Chopped
  • 2 Large (5 Inches Long) Potatoes, Peeled And Chopped
  • 2-3 Quarts Chicken Or Vegetable Broth
  • 2 Bay Leaves
  • Salt And Pepper To Taste

INSTRUCTIONS:

  1. Heath the oil in a large soup pot over medium-high heat.  Add the ham, chorizo, onions, carrots and garlic and sauté until the onions are translucent.  Stir in the remaining ingredients and bring to a boil.  Lower the heat and simmer for 1 hour.
