INGREDIENTS:

  • 2 Tablespoons Butter
  • 4 Sweet Onions, Chopped
  • 4-6 Garlic Cloves, Minced
  • 3 Large (5 Inch) Potatoes, Diced
  • 3 Cups Chicken Broth
  • Paprika To Taste
  • Salt And Pepper To Taste
  • 3 Cup Half-And-Half
  • Fresh Snipped Chives For Garnish

INSTRUCTIONS:

  1. Heat the butter in a large soup pot to medium-high.  Add the onions and garlic and sauté 4-6 minutes until the onions are soft.  Add the potatoes, chicken broth, paprika, salt and pepper and bring to a boil.  Cover, lower the heat and simmer 20-30 minutes until the potatoes are soft.  Let cool and the puree in a blender or food processor, and then transfer to a large tureen.  Stir in the half-and-half, cover and refrigerate overnight.  Garnish with the fresh chives when serving.
