INGREDIENTS:

  • 4 Pounds Turkey Carcasses And Giblets
  • 2 Sweet Onions, Chopped
  • 2 Leeks, Chopped
  • 6 Garlic Cloves
  • 4 Carrots, Chopped
  • 4 Celery Ribs, Chopped
  • 10 Sprigs Fresh Sage
  • 10 Sprigs Fresh Parsley With Stems
  • 2 Bay Leaves
  • 10 Peppercorns
  • Salt And Pepper To Taste
  • Pure Spring Water To Cover

INSTRUCTIONS:

  1. Place all your ingredients into a large soup pot and bring to a boil.  Lower heat and simmer for 4 hours adding water if necessary.  Let cool, skim off all the fat and strain.
