INGREDIENTS:

  • 2 Tablespoons Butter
  • 1 Onion, Diced
  • 4-6 Garlic Cloves, Minced
  • 28 Ounce Can Whole Tomatoes
  • 4 Cups Beef, Chicken Or Vegetable Broth
  • Fresh Basil Leaves To Taste
  • Salt And Pepper To Taste
  • 1 Cup Half And Half

INSTRUCTIONS:

  1. Heat the butter to medium-high in a large soup pot.  Add the onion and garlic and sauté 3-5 minutes until the onions are translucent.  Stir in the tomatoes, broth, basil, salt and pepper and bring to a boil.  Reduce the heat and simmer for 1 hour.  Let cool and puree in batches with your blender or food processor.  Return back to your soup pot, stir in the half and half and heat through.
