• 2 Tablespoons Olive Oil
  • 1 Pound Skinless, Boneless Chicken Breasts, Cubed
  • 2 Onions, Chopped
  • 4-6 Garlic Cloves, Minced
  • 1 Red Bell Pepper, Chopped
  • 1 Green Bell Pepper, Chopped
  • 48 Ounces Chicken Broth
  • 2 Cans Original Ro*Tel
  • 1 Cup Canned Black Beans
  • 1 Cup Canned Corn
  • Hot Pepper Sauce To Taste
  • Chili Powder And Cumin To Taste
  • Cayenne Pepper To Taste
  • Salt And Pepper To Taste


  1. Heat your oil to medium-high in a large soup pot.  Add your chicken cubes and sauté 3-5 minutes.  Add the onions, garlic and bell peppers and sauté until the chicken is browned and your vegetables are soft.  Stir in the remaining ingredients and bring to a boil.  Lower the heat and simmer for 1 hour, stirring occasionally.
