INGREDIENTS:

  • 10 Cups Water
  • 1 Sweet Onion, Chopped
  • 2 Tablespoons Vinegar
  • 6 Bay Leaves
  • Salt And Pepper To Taste
  • 6 Cups Large Shrimp, Peeled And De-Veined
  • 3 Tablespoons Plus 1 Teaspoon Butter Or Bacon Drippings
  • 4-6 Garlic Cloves, Minced
  • 1 Green Bell Pepper, Chopped
  • 1 Red Bell Pepper, Chopped
  • 3 Celery Ribs, Chopped
  • 4 (2 Inch) New Potatoes, Quartered
  • 28 Ounce Can Diced Tomatoes
  • Old Bay Seasoning To Taste
  • Salt And Pepper To Taste

INSTRUCTIONS: 

  1. Combine the water, onion, vinegar, salt and pepper in a large soup pot and bring to a boil.  Add your shrimp and cook 8-10 minutes.  Drain, set aside the shrimp and save the shrimp broth.  Heat the butter or bacon drippings in a large soup pot on medium-high.  Add the garlic, bell peppers, celery and potatoes and sauté 8-10 minutes.  Stir in your reserved shrimp broth, diced tomatoes, Old Bay Seasoning, salt and pepper and bring to a boil.  Lower the heat and simmer 20-30 minutes.  Stir in the shrimp and heat through.
