INGREDIENTS:

  • 2 Tablespoons Butter
  • 2 Green Onions, Minced
  • 2 Garlic Cloves, Minced
  • 2 Tablespoons All-Purpose Flour
  • 3 Cups Fish Broth
  • 3 Cups Half-And-Half
  • 4 Cups Crabmeat, Flaked
  • 2 Ounces Sherry
  • 1/2-1 Teaspoon Paprika
  • Salt And Pepper To Taste
  • Lemon Slices For Garnish

INSTRUCTIONS:

  1. Melt the butter over medium-high heat in a large soup pot.  Add the green onions and garlic and sauté 3-5 minutes until soft.  Whisk in the flour and sauté another 2 minutes.  Stir in the fish broth and bring to a boil.  Lower the heat and simmer for 5 minutes.  Stir in the half-and-half, crabmeat, sherry, paprika, salt and pepper and bring almost to a boil.  Do not boil!  Serve immediately with lemon slices fro garnish.
