INGREDIENTS:

  • 12 Cups Fish, Chicken Or Vegetable Broth
  • 8 Ounces Lean Sirloin, Cut Into Cubes
  • 6 Ounce Can Tomato Paste
  • 2 Bay Leaves
  • Salt And Pepper To Taste
  • 4 Tablespoons Bacon Drippings
  • 2 Pounds Okra, Sliced
  • 3 Sweet Onions, Chopped
  • 4-6 Garlic Cloves, Minced
  • 28 Ounce Can Diced Tomatoes
  • Hot Pepper Sauce To Taste
  • Creole Seasoning To Taste
  • Salt And Pepper To Taste
  • 2 Cups Raw Shrimp, Peeled And De-Veined
  • 1 Pound Crabmeat

INSTRUCTIONS:

  1. Combine the broth, sirloin, tomato paste, bay leaves, salt and pepper in a large soup pot.  Stir to mix and bring to a boil.  Lower the heat and simmer for 1 1/2 hours until the beef is tender.  Heat the bacon drippings in a large skillet to medium-high.  Add the okra, onions and garlic and sauté 10 minutes; add to your soup.  Stir in the diced tomatoes, hot pepper sauce, Creole seasoning, salt and pepper and bring back to a boil.  Cover, lower the heat and simmer for 1 hour.  Stir in the shrimp and crabmeat and continue to simmer at least 1 more hour.
