• 2 Tablespoons Butter
  • 1 Onion, Diced
  • 2-4 Garlic Cloves, Minced
  • 1 Carrot, Diced
  • 1 Celery Rib, Diced
  • 2 Cups Chicken Or Fish Broth
  • 2 Cups Half-And-Half
  • 16 Ounces Fresh Oysters With Liquid
  • Salt And Pepper To Taste


  1. Heat the butter in a large soup pot on medium-high.  Add the onion , garlic, carrot and celery and sauté 4-6 minutes until soft.  Add your broth and bring to a boil.  Lower the heat and simmer 5 minutes.  Stir in the half-and-half, oysters, salt and pepper and simmer until the oysters begin to curl.
