INGREDIENTS:

  • 8 Teaspoons Butter
  • 1 Sweet Onion, Diced
  • 2-4 Garlic Cloves, Minced
  • 1 Carrot, Diced
  • 1 Celery, Diced
  • 8 Ounces Fresh Mushrooms, Chopped
  • 48 Ounces Chicken Broth
  • 4 Ounces Dry White Wine
  • 1-3 Teaspoons Worcestershire Sauce
  • Cayenne Pepper To Taste
  • Salt And Pepper To Taste
  • 2 Cups Half-And-Half
  • 2 Cups Lobster Meat

INSTRUCTIONS:

  1. Melt the butter in a large soup pot over medium-high heat.  Add the onion, garlic, carrot and celery and sauté 5-7 minutes until soft.  Add the mushrooms and sauté another 2 minutes.  Stir in the broth, wine, Worcestershire sauce, cayenne pepper, salt and pepper and bring to a boil.  Cover, lower the heat and simmer for 30 minutes.  Stir in the half-and-half and lobster and heat almost to boiling.
